    Frozen Watermelon Margarita’s


    As served at Abby's party

    Party bucket:

    1 litre of tequila (I used Jose Cuervo Silver)
    2 litres margarita mix (Master of Mixes, Mr & Mrs T’s, or Jose Cuervo)
    1 litre of watermelon puree
    200 ml Triple Sec, Cointreau or Grand Marnier
    Lime wedges (optional)

    1. To make watermelon puree, cut watermelon flesh from rind and remove all seeds. One kg of watermelon flesh will make one litre of puree. Put watermelon in a blender or use a stick blender to reduce watermelon to a pulp

    2. Mix everything together, and put in a large pail or bucket and freeze for at least 24 hours. The alcohol will stop the mix from freezing completely, what you will have is a slushy mixture.

    3. Remove bucket from freezer and stir before serving (tequila tend to separate out)

    4. Using a cut lime, rub rim of glass and then dip in salt (sugar for those concerned about their sodium intake)

    5. Fill glass with margarita mixture

    6. Garnish with a wedge of lime if desired

    Individual drinks:
    50 ml tequila
    100ml margarita mix
    160 ml (2/3 cup) frozen watermelon cubes (made ahead of time)
    10 ml Triple Sec, Cointreau or Grand Marnier
    Lime wedge (optional)

    1. To make watermelon cubes, cut flesh from watermelon and remove seeds. Chop watermelon into cubes approximately 20-25 mm. Put cubes on a tray and freeze for use later. These keep well if put in a ziplock bag after freezing, you can then make a ‘rita whenever you want!

    2. Put tequila, margarita mix, watermelon cubes and triple sec (or other orange flavoured liqueur) in a blender and blend until combined. Best results are obtained if the tequila and margarita are well chilled before mixing

    3. Using a cut lime, rub rim of glass and then dip in salt or sugar

    4. Fill glass with margarita mixture

    5. Garnish with a wedge of lime if desired

    Enjoy!

    Note: Early in the season, watermelons don’t always have the deep red colour that makes the drink so attractive. Similarly, if you use gold tequila, the final colour will be less intense. The flavour will still be fine, but if you want, you can add a bit of red food colouring (cochineal) to the mix.

    I know this is not a recipe, but yesterday, I had lunch at Hippopotamus and they served a "Marmite onion soup". It was absolute YUM.
    Next chance I get, I'm going to try and invent my own version of this.

    Portuguese Chicken with Crispy Potatoes.

    Tried this and it was yummo.
    I did not add the extra T of oil and vinegar as I was worried about consistency.
    The vinegar was a bit obvious but I dont mind that.
